BACARDI Rum: Pioneering Favorite of the Past – Toasting the Holidays Today

Bacardi Rum CakeBACARDI Rums are so widespread and popular they hardly need an introduction.  Don Facundo Bacardi revolutionized the spirits industry in 1862 when he began producing his light-bodied rum in Santiago, Cuba.  It is said the Bacardi symbol of the bat is inspired by the fruit bats that lived in the rafters of the distillery house in Santiago.  Through Bacardi’s efforts to smooth the character of rum into a fine spirit, he began filtering the rum through a charcoal process to remove impurities.  He also began aging his rum in oak barrels to mellow the spirit.  Bacardi produced the first “white” rum.  Today the BACARDI Rum empire operates out of Puerto Rico. 

 

BACARDI Rum begins with high quality sugarcane molasses.  Special yeast called “levadura” is used in the fermentation process.  To create a lighter product, the spirit is distilled several times.  Charcoal-mellowing filtration through the use of select tropical woods and coconut shells allow drop by drop filtration to remove the slightest of impurities.  The BACARDI Rums are then aged; two years in charred barrels for BACARDI Gold and one year with more filtration for BACARDI Superior.  Next the rums are blended into different expressions as they were when Don Facundo created his original BACARDI rum seven generations ago.

2 parts BACARDI LIMON

1/2 part Sweetened Lime Juice

1/2 part Melon Liqueur

 

Pour ingredients over crusted ice in a rocks glass.  Garnish with a cherry.

3 parts BACARDI Select Rum

5 parts Half & Half

1/2 part Sugar

1/2 part Vanilla Extract

 

Shake ingredients with crushed ice and strain into a mug.  Sprinkle with nutmeg.

750ml Bottle BACARDIÒ Gold Rum

1 L Cranberry Juice

2 L Ginger Ale, Chilled

8 ounce Orange Juice

1 ounce Lime Juice

1-1/2 ounce Lemon Juice

Extra citrus fruit for garnish

Ice

In large container, combine rum and fruit juices. Chill. Just before serving, pour into large punch bowl. Add ice and gently stir in chilled ginger ale. Garnish by floating orange, lemon and lime slices on top. Makes 16 cups.
